Borage is a glorious flower. Not only is it packed with nectar for the bees, but it will also add a shot of colour to summer drinks. The leaves can be used young to add a cucumber flavour to salads or butters, but it is the flowers that are really special.

Borage is easy to grow. Just throw the seed on some fertile soil, almost any time of year, & let it do its thing. It will self-sow once established, & you might even be lucky enough to get a few white in amongst the blue.

For drinks, harvest the flowers. (The petals will separate from the hairy sepals after picking.) Half fill the cups of an ice cube tray & place a flower in each. Freeze. When they are fully frozen, fill to the top & freeze again. Your ice cubes will have a flower in the middle & look absolutely wonderful. Serve with Pimms or celebratory drink of your choice.
